Didier Montchovet, Coteaux Bourguignons 2018


Grape: Gamay
Region: Burgundy

Marl soils, clay, and limestone, from the late Jurassic period. Vineyard planted in 1950 with less than one hectare of Gamay. Certified Demeter (Biodynamic) and Biologique (Organic).

Carefully hand-selected fruit, spontaneous native yeast fermentation with semi-carbonic maceration, on the skins for 8 days before 6-8 months aging in enameled tanks. Minimal sulfur is used during winemaking and bottling. Bottling is in accordance with the lunar cycle.
